On the transaction screen, there is no place for me to book this transaction to a project or select a correlated product and service item. The category list only gives me the chart of accounts as an option.

Hi! There is a Category/Item column in the dashboard. If the transaction accepts Item, you should see Item options in the dropdown in that column. For projects, you can use the Customer dropdown in the dashboard to choose a project (i.e. sub-customer). Let us know if that helps or if you can provide an example of what you’re trying to do and expecting/wanting to see in Uncat. Thanks!
